I’m not sure how many of you wonderful people love chocolate the way I do. I am often searching for chocolate recipes to match my love of Chocolate Haagen Daas ice cream and Purdy’s salted chocolate caramels.
Another one of my food passions is Quinoa, a nutty tasting grain rich in protein. I usually pair this healthy grain with Greek salad, but today I choose chocolate!
Today, I am happy to share my favourite Chocolate Quinoa Brownie Recipe passed onto me from one of my friend’s mothers. This gluten free treat pairs wonderfully with a warm cup of chai available in our gift boxes.
- 2 cups of cooked quinoa (cooled)
- ¾ cup of melted butter
- 4 eggs
- 1/3 cup milk
- 1 tsp vanilla
- 1 ¼ cup white sugar
- 1 cup cocoa powder
- 1.5 tsp baking powder
- 1 tsp baking soda
- ½ tsp salt
½ cup of semi-sweet chocolate chips or powdered sugar
1) Puree all ingredients in a food processor for 1-2 minutes.
2) Butter medium sized circular pan and line bottom with parchment paper.
3) Pour batter into the pan and bake at 350 degrees for approximately 40 minutes.
4) When brownies are still hot in the pan, sprinkle with chocolate chips and then smooth melted chocolate into a thin layer. Alternatively, sprinkle with powered sugar.
